"Now then, i never made this topping before but sure it will be delish. Starting with making a quick chutney but in real life a bought one would do. For anyone not liking blue cheese substitute goats or feta.

14 of us cooked along live, it was Tempura Vegetables - "love the dish, thankyou Josie!!" Here are some of our dishes....

Tempura Vegetables - 3 elements: Batter, Veggies, Sauce

For the Tempura batter:
85 grams - Flour Plain/Self raising
2 tablespoons- Cornstarch
2 teaspoon- Baking Powder
1/4 teaspoon- Salt
1/8 teaspoon- Pepper White/Black
1 - Egg
3/4 cup - Ice water
* Alternatively you can use Tempura mix from the shop.

For the Veggies:
Sweet Potato
Aubergine
Courgette
Peppers
Shiitake Mushrooms
*Pretty much any veggie is ok to make tempura

To prep you veggies:
Cut veggies thinly so it's easy to fry about 1/8 inches 
Cut peppers and courgette into bite size
Remove mushrooms stems

For the sauce:
1 cup - Vegetable stock
1/4 cup - Soy sauce
1/4 cup - Mirin (substitute with white wine and 1 tablespoon of sugar if you don't have it)
2 tablespoons - Maple syrup or Honey
2 cups - Cooking Oil for frying

70 gram                                 Green bean-trimmed

2 clove                                   Garlic-finely chopped 

10 leaf                                    Basil

1 teaspoon                              Sugar

1 tablespoon                           Vegetable oil

1 teaspoon                              Thai red curry paste

1/2 teaspoon                           Oyster sauce

1/8 teaspoon                           Fish sauce

1/8 teaspoon                           Lemon juice

Ingredients: 

400 gram Cooked Thai Jasmine rice-leave it to cool

100 gram Tempeh or Extra-firm tofu-cubed

60 gram   Chestnut Mushroom-sliced

40 gram   Broccoli-part boiled

20 gram   Red chilli-chopped or sliced

12 gram   Basil leaves

2 clove Garlic-finely chopped

60 ml   Vegetable oil

3/4 tablespoon  Light Soy sauce

1 teaspoon    Dark soy sauce

1-2 teaspoon Vegan Yeast extract spread (Marmite)

1/2 teaspoon Sugar

1/2 teaspoon Lemon juice

1 pinch  Salt and ground black pepper
